Sweetheart  Fruit Tartlets

These little cuties are the perfect ending to a any meal . Feel free to use any other fruit as available.

 2 packages (3.4 ounces each) instant vanilla pudding 
  3 1/2 cups milk 
2 teaspoons grated lemon zest 
  12 mini graham-cracker tart shells 
sliced peeled kiwifruit, drained canned mandarin orange segments, sliced strawberries, and/or small fresh raspberries 
1/2 cup red-currant or apple jelly, melted (optional)


Preparation Time: 10 minutes plus chilling  
Cooking Time: 15 minutes  
Makes 12 tartlets


1. Prepare the pudding using the milk. Stir in the lemon zest. Cover and refrigerate until ready to fill tartlets.  

2. Just before serving, spoon the pudding into tart shells. Arrange fruit on top. If desired, brush fruit with melted red-currant or apple jelly, depending on the color of fruit.
