Sugar and spice Carrots

Sugar and spice and everything nice makes these veggies party-perfect. Pair with Nutty Green Beans for a colorful side dish. 

  3 pounds fresh or frozen baby carrots 
  6 tablespoons butter 
  3 tablespoons maple syrup 
  3 tablespoons brown sugar 
  2 teaspoons salt 
  2 teaspoons pepper 
  1 teaspoon ground ginger 
  1 tablespoon chopped fresh parsley 
 

Preparation Time: 5 minutes  
Cooking Time: 10 minutes  
Serves 12

1. Cook the carrots in a large saucepan of boiling water until crisp-tender.  

2. Meanwhile, in a medium saucepan over medium heat, melt the butter. Add the maple syrup, brown sugar, salt, pepper and ginger. Cook over medium-high heat until thick and caramelized. Drain carrots; toss in butter mixture to coat. Sprinkle with parsley before serving.
