
Herbed Potato Galette
These potato "cakes" may look fancy, but they’re surprisingly
simple to make. If you’re not feeding a crowd, it’s easy to halve the recipe and
make just one galette.
6 tablespoons
butter
2 teaspoons salt
4 pounds baking potatoes,
peeled and thinly sliced
4 cloves garlic, minced
1 teaspoon
dried thyme

Preheat oven to 400°F. In two large skillets over medium-high heat, melt butter.
Salt the potatoes and add to the skillet. Cook, partially covered, for 15 to 20
minutes, until tender, stirring occasionally without breaking potatoes. Stir in
garlic and thyme.
2. Grease two 8-inch cake pans. Divide
potatoes between pans, arranging the ones on top in overlapping circles. Bake,
uncovered, for 20 minutes. Broil for 3 to 4 minutes, until browned.
3. Invert each pan of potatoes onto a plate. Invert again so that
browned side is up. Cut into wedges.
