
Savory Little Bit of This and That
Slice red and yellow bell pepper, zucchini and baby eggplant. Sprinkle with olive oil and dried oregano. Transfer to a large roasting pan. Sprinkle halved cherry tomatoes with grated Parmesan cheese and chopped fresh parsley. Add to the roasting pan. Bake vegetables at 400F until tender and browned, 10-15 minutes. Arrange on a large platter along with sliced salami. Serve with marinated mozzarella balls, black or green olives and breadsticks. Do-Ahead Tip The platter can be assembled up to 1 day ahead of time. Cover with plastic wrap and refrigerate. Let come to room temperature before serving.
