- 3 pounds sweet potatoes (about 5), peeled and cut into 1-inch chunks
- 1 cup apple cider or juice
- 1/2 teaspoon salt
- 2 tablespoons butter
- 1/8 teaspoon fresh-ground black pepper
directions
- Put the potatoes, cider, and salt in a large pot. Bring to a boil.
Reduce the heat, cover, and simmer, stirring once, until the potatoes
are tender, 25 to 30 minutes.
- Mash the potatoes with the cider until smooth. Add the butter and
pepper and heat just until the butter melts
