Its easier to make the recipe the night before and then bake in the
oven as the turkey is resting.
INGREDIENTS:
6 lbs. sweet potatoes
1 cup dark brown sugar
1 Tablespoon freshly ground nutmeg
2 Tablespoons cinnamon
1 cup cold unsalted butter, cut into pieces
PREPARATION:
Preheat oven to 400°F 1.
Bake the sweet potatoes for one hour.
2. Allow to cool; then remove the
skins.
3. Butter a baking dish, large enough to hold the potatoes in
three layers.
Slice
the potatoes into rounds about 1/2-inch thick.
4. Mix the brown sugar,
cinnamon and nutmeg together. Arrange one layer of the potatoes and sprinkle
with some of the sugar mixture. Dot with butter. Repeat twice more.

Cover and refrigerate, if you have prepared them in advance. Or bake, uncovered,
for 20 minutes in a preheated 400°F oven.
