Macadamia Nut and Ginger Stuffing

Ingredients:

  • 6 cups 1/2- to 3/4-inch cubes Hawaiian bread (sweet egg bread), crust trimmed
  • 1/4 cup (1/2 stick) butter
  • 1 pound sweet Italian sausage, casings removed
  • 1 cup chopped shallots
  • 1/4 cup minced peeled fresh ginger
  • 1 cup chopped green onions
  • 1 cup chopped drained canned water chestnuts
  • 1 cup coarsely chopped dry-roasted macadamia nuts
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons grated orange peel
  • 1/4 teaspoon fresh Jalapeno pepper, seeded, and chopped fine
  • 3/4 cup (about) canned low-salt chicken broth
  • 3 large eggs, beaten to blend
Directions:

Preheat oven to 350°F. Place bread cubes on baking sheet. Bake until dry and firm, stirring occasionally, about 18 minutes. Transfer to very large bowl.

Melt butter in heavy large skillet over medium-high heat. Add sausage, shallots and ginger. Sauté until sausage is cooked through, breaking up meat with back of spoon, about 10 minutes. Transfer to bowl containing bread cubes. Mix in green onions and next 6 ingredients. (Can be made 1 day ahead. Cover; chill.)

Butter 13x9x2-inch baking dish. Mix enough chicken broth into stuffing to moisten. Season with salt and pepper. Mix in eggs. Transfer stuffing to prepared dish. Cover with foil. Bake 45 minutes. Uncover and bake until golden brown on top, about 10 minutes longer.

Apple Coffee Cake

Here’s an apple coffee cake recipe. It’s really good. I’ve made it 3 times now and none makes it to the afternoon. That’s in a 9x13 pan -- hungry boys! Make the topping first since it needs to be done first in order to simmer on the stove while you’re mixing up the batter. - ke

Topping (prepare first):

2 tablespoons butter
1/3 cup brown sugar
2 cups cored and sliced apples, may be left unpeeled
dash cinnamon

Melt butter in medium sauce pan. Add brown sugar and cinnamon. Stir until combined. Add apple slices. Stir and simmer on a low heat while you mix the cake batter.

Combine:
2 cups flour 2 1/4 tsp. baking powder 1/2 tsp. salt Mix in separate bowl: 1/2 cup shortening 1/2 cup sugar

Add to shortening and sugar mixture, mixing well after adding each egg:
3 eggs

Add dry mixture to the batter alternately with:
1 cup milk

Pour batter into greased 9 x 13 inch baking dish. Spread apple topping over batter.

Bake at 350°F. for 30-35 minutes.

Cheddar Apple Bread

2 1/2 cups flour
1/3 cup melted margarine
3/4 cups sugar
2 cups shredded cheddar cheese
2 tsp. baking powder
1 1/2 cups peeled chopped apples (such as winter bananas, galas, jonagolds or romes)
1/2 tsp. salt
3/4 cup chopped nuts (optional)
1/2 tsp. cinnamon
2 eggs beaten
3/4 cup milk

Combine dry ingredients except cheese and apples. Combine eggs, milk, and melted margarine. Add to dry ingredients. Stir in cheese and apples and nuts if using. Spoon into well greased and flour 9x5 inch loaf pan. Bake at 350° F. for 65 to 70 minutes. Knife should come out clean when inserted into center of loaf. Let stand for 5 minutes. Remove from pan.
