Arkansas BBQ Sauce

2 quarts water
1 1/2 cups brown sugar
1 1/2 cups worcestershire sauce
1 1/2 cups yellow mustard
1 quart catsup
1/2 cup black pepper
1/2 cup dried red pepper flakes
3 quarts red wine vinegar
1 quart white wine
1 1/2 cups salt

Bring to boil and then simmer for about 1/2 hour. do not cook or store in
aluminum store in glass. Makes 2 gallons

Hush Puppies

2 tablespoons cornmeal mix 1 egg
2 tablespoons self rising flour buttermilk
2 tablespoons sugar chopped onion
1/2 teaspoon baking powder

Set 10 minutes before cooking. Drop teaspoonful into hot
grease.

Hot Pepper Relish

8 large sweet peppers 3 cups sugar
9 jalapeno peppers 3 cups cider vinegar
3 medium onions 2 tablespoons salt
6 large stalks celery 2 drops green food coloring


Grind vegetables together. Drain well. Mix with other
ingredients and bring to boiling. Lower heat and simmer
gently
for 30 minutes, stirring occasionally. Pack in hot jars
and
process 5 minutes in boiling water bath. Yield: 3 pints.

Hot Sauce

1 gallon tomatoes 1 teaspoon cumin
1/4 cup salt 1 purple onion
1 teaspoon oregano 1/2 jar jalapenos

Liquefy in food processor. Keep refrigerated.
