Nebraska Baked Beans

Dice and fry bacon lightly; drain off fat. Dice onion and fry slightly. Brown ground beef. Add bacon, onion and beans; mix well. Stir in brown sugar, vinegar, catsup, and mustard.

Bake 45 minutes at 325 degrees.

Nebraska Master Mix

This mix is to be used for muffins etc same as Bisquick many recipes appear on the back of the box.


4 cups unsifted, all purpose white flour (spoon lightly into cup and level off)
1 cup butter flavor or solid white shortening
1/3 cup double-acting baking powder
1 cup nonfat dry milk powder
4 cups whole wheat flour
3 tablespoons sugar
2 teaspoons salt

1. Into a large bowl, sift together 4 cups white flour, the baking powder, sugar and salt. This removes lumps and helps mix ingredients.
2. Cut in shortening with 2 knives, pastry blender, or fingers until it looks like coarse oatmeal.
3. Stir in the dry milk.
4. Stir in the 4 cups of whole wheat flour; mix well.
5. Store in covered container at room temperature.
Yield: 11 cups. Keeps about 2 months. For longer storage refrigerate or freeze.

Bisquick Biscuits

2 1/4 cups Nebraska Master Mix
2/3 cup milk

Preheat oven to 450 degrees F.

Stir ingredients until soft dough forms. Turn onto surface generously sprinkled with Bisquick. Knead 10 times. Roll 1/2-inch thick. Cut with a 2 1/2-inch cutter. Place on an ungreased cookie sheet. Bake for 8 to 10 minutes until golden brown.

To make drop biscuits, do not knead dough. Drop by spoonsful onto an ungreased cookie sheet.

Cheese-Garlic Biscuits

Decrease flour to 2 cups and add 1/2 cup shredded Cheddar cheese. Drop onto ungreased cookie sheet, and bake as above.

Mix 2 tablespoons butter or margarine, melted, and 1/8 teaspoon garlic powder. Brush over warm biscuits.

Apple Crisp Oven Pancake 


1/2 c  Oats; regular 
1/4 c   Nebraska Master Mix 
1/4 c  Brown sugar
2 T  Butter - softened
3/4 ts Cinnamon
2 c  Bisquick
3/4 c  Milk
3/4 c  Chunky applesauce
1/4 ts Vanilla
1    Egg
 
Heat oven to 425F.
 
Grease jelly roll pan.
 
Mix oats, 1/4 cup Nebraska Master Mix , brown sugar, butter (or margarine)
and cinnamon.
 
Beat remaining ingredients with whisk until well-blended. Pour
into pan. Spread batter to edges. Sprinkle with oats mixture.
 
Bake 14 to 16 minutes, or until light golden brown. Cut into
6 pieces and serve.
