Lemon Dill Chicken 
This rich
low carb recipe can easily be made low fat by substituting light
sour cream. This recipe goes together quickly but is impressive
enough for company.
4 boneless, skinless chicken breasts
1 C sour cream
1 T minced fresh dill (or 1 tsp.
dried)
1 tsp. pepper (preferably coarse ground fresh)
1 tsp. lemon zest, minced
Serves 4
Preheat
oven to 425° F. degrees.
Combine all ingredients except
chicken in a small bowl. Grease a medium casserole dish or spray
with nonstick cooking spray.
Spread 1/4 of the lemon dill
sauce over the bottom of pan. Arrange chicken breasts on top of
sauce in a single layer. Pour remaining sauce over chicken and
spread evenly. Bake uncovered for 30-35 minutes, until chicken is
done.
