Sunday Chicken Parmesan
serves 6 to
8
8 boneless skinless chicken breast halves
1 egg
slightly beaten
1/2 cup seasoned bread crumbs
2
tablespoons butter or margarine
1 3/4 cups spaghetti sauce
1/2 cup mozzarella cheese, shredded
1 tablespoon
grated Parmesan cheese
1/4 cup fresh parsley, chopped
Wash and pat dry chicken. Place between to pieces of
waxed paper and flatten to 1/2 thickness. Dip chicken into egg, and
dredge in the bread crumbs until well coated Melt butter in a
skillet and sauté chicken until evenly browned on both sides. Pour
spaghetti sauce over chicken and reduce heat to simmer, cover and
cook about 10 minutes. Sprinkle in both cheeses and parsley, recover
and continue to cook for about 5 minutes, or until the cheese has
melted and chicken is fork tender and cooked through. Remove from
heat and serve with pasta. To make this dish easy, use your
favorite jar of spaghetti
sauce.
