Big Boy Inspired Egg Salad
At the salad bar in most of the Elias Brother Big Boys that we’ve visited there is always a variety of salad bar choice. The cooks are often allowed some creative freedom with their salad bar dishes and this was one of them. I have never had it like this anywhere as I did in East Tawas.
6 shelled hard boiled eggs, crumbled
1 tablespoon dry minced onion
2/3-cup real mayonnaise
½-cup milk
¼-cup Miracle Whip
Salt and pepper to taste
Lettuce
Paprika
Dry Minced Parsley, rubbed to a fine dust
Through the wire of a French frying basket, crumble 6 shelled, hard-boiled eggs. In bowl combine with 1-tablespoon dry minced onion, 2/3-cup real mayonnaise mixed with ½-cup milk and ¼-cup Miracle Whip. Add salt and pepper to taste. Refrigerate this tightly covered several hours before serving as a side-salad on a lettuce lined plate, garnishing it with paprika and dry minced parsley rubbed to a fine dust between your fingers.
Makes 6 servings.
Refrigerate leftovers to use within a few days. Do not freeze.
