Bake and Baste Chicken (Boston Chicken)


Chicken Marinade

I recreate rotisserie style chicken at home without a rotisserie. After baking the pieces per recipes that follows, as soon as it's out of the oven I seal the baking pan in foil for 20 minutes which softens the meat. Seal it too long and it becomes tough, however, - but it's never greasy, never dry. 

1/4-cup canola oil
1-tablespoon honey
1-tablespoon limejuice
1/4-teaspoon paprika
4 chicken breast halves washed/patted dry

Mix all ingredients together and warm them in small pan or in microwave just to melt and  then the honey in the mixture. Arranged 4 chicken breast halves skin-side-up in Pam-sprayed 9" square baking pan or dish. Bake uncovered at 400 degrees F for 35-40 minutes, basting pieces in the marinade without WITHOUT TURNING THEM, every 8 to 10 minutes or till richly browned. Immediately upon removing from the oven seal the dish in foil and let stand 10 to 15 minutes before serving.

Serves 4 without leftovers.
