 Chocolate Mousse
                12 oz. bittersweet chocolate
4 oz. unsalted butter
5 oz. egg whites
2 oz. sugar
 31/2 cups heavy cream

        
1.In double broiler combine chocolate & butter.
2.Whip cream and sugar until fluffy.
3.Beat egg whites to soft peaks.
4.Using whisk combine egg whites,chocolate,and cream.
5.Cover and chill
