Jumpin' Jambalaya


Ingredients

1 large red or green bell pepper, chopped
1 large onion, chopped
2 tomatoes, chopped
1 cup chopped celery
1 clove garlic, chopped
2 tablespoons minced fresh parsley
1 teaspoon dried thyme leaves
1 teaspoon dried oregano leaves
1/8 teaspoon cayenne pepper
1 teaspoon salt
6 ounces smoked sausage, chopped
8 ounces chicken breast, skinned, boned and chopped
2 cups beef broth
1/2 pound cooked, shelled medium shrimp, halved lengthwise
1 cup cooked rice

Instructions

In slow cooker, combine red bell pepper, onion, tomatoes, celery, garlic, parsley, thyme, oregano, cayenne pepper, salt, smoked sausage, chicken and broth. Cover and cook on low for 10 hours.

Increase temperature to high. Add shrimp and rice. Cover and cook for 30 minutes.
