Beef Goulash
2 medium onions,
halved and sliced 1 1/2 pounds boneless beef chuck or beef round
steak, cut into 1-inch cubes 4 teaspoons paprika 1/4 teaspoon
fresh ground pepper 3 tablespoons catsup 2 tablespoons
water 3/4 pound small red potatoes, scrubbed and shredded 1
(14 1/2 oz) can sauerkraut, rinsed and drained well 1/2 cup sour
cream 1/2 to 1 teapoons caraway seeds (optional) Chopped fresh
parsley, for garnish
In a 3 1/2 quart crock pot, mix together
the onions, beef, paprika, pepper, catsup, water, and potatoes.
Top with sauerkraut. Cover and cook on the low heat setting 8
hours, or until the beef is tender. Mix gently. Stir in the sour
cream and caraway seeds. Serve garnished with the parsley.
