Caramel Rice Pudding
3 cups cooked white rice 1/2 cup raisins 2 tsp.
vanilla extract 1 can (14 ounces) sweetened condensed milk 1
can (12 ounces) evaporated milk 1 tbsp. sugar 1 tsp. ground
cinnamon.
Prepare the inside of 2- to 3 1/2-quart slow cooker
with cooking spray. Mix all ingredients except sugar and cinnamon in
the cooker. Cover and cook on low-heat setting 3 to 4 hours, or
until liquid is absorbed. Stir pudding before serving. Sprinkle
pudding with sugar and cinnamon. Serve warm.
Makes 8
servings.
