Apple and Onion Pot Roast



INGREDIENTS

1 (3-pound) boneless pot roast
2 cups apple cider
1/3 cup red wine vinegar
1 teaspoon salt
1 teaspoon ground allspice
1 teaspoon ground bay leaves
1 teaspoon ground ginger
1 teaspon ground cinnamon
2 tablespoons molasses
1 (1-pound) bag baby carrots
1 medium onion, sliced
2 Golden Delicious Apples, peeled, cored, and sliced

In a large slow cooker, place pot roast. Whisk together apple cider, vinegar, salt, allspice, bay leaves, ginger, cinnamon, and molasses. Pour over pot roast.

Cover and refrigerate overnight.

Before cooking, top roast with carrots and onions.

Cook on HIGH for 6 hours or LOW for 10 hours. Add apple slices halfway throughout cooking process.
