Firehouse Grille and Pub Quesadillas

Ingredients:

1 large flour tortilla shell
1/2 cup sour cream
1/2 cup shredded Cheddar cheese
1/2 cup diced tomatoes
1/2 cup shredded lettuce
1/2 cup jalapeno peppers, sliced (or adjust to taste)
1/2 cup cooked chicken breast, diced

Directions:

Put shell on grill. Add sour cream to half of the flat surface. Add Cheddar cheese to other half. Add tomatoes and lettuce to half with the cheese. Arrange the peppers over the half with sour cream. Grill until shell is crispy. Add chicken to the half of the shell with the sour cream and peppers. Now, gently fold the tomato and lettuce side over onto the chicken side, making a half-moon. Cut into four wedges. Serve with salsa if desired.
