Freezing Fresh
Corn
Husk ears and remove silk.
Blanch corn in boiling water
for 8 minutes, 10 minutes for large ears.
Chill in cold water. Package
in moisture-proof wrappings.
For kernel corn, blanch for 4 1/2 minutes.
Cut off kernels and cool, as above. Pack tightly to remove air spaces
in freezer bags or jars.
