Homemade Mincemeat
6 pounds green
tomatoes
2 pounds tart apples
4 cups dark raisins
4 cups brown
sugar
2 cups apple juice or cider
1/2 cup cider vinegar
2 tsps
grated orange rind
2 tsps grated lemon rind
1 tsp ground nutmeg

tsps cinnamon
Core and quarter apples and tomatoes. Do not peel.
Put in food chooper and chop coarsely, or chop by hand. Combine all
ingredients in a large kettle. Do not use aluminum. Simmer for 2 hours,
stirring frequently until thick. Put in containers and freeze until needed
or process in canning jars.
