Spiced Watermelon Pickles

3 pounds white portion of watermelon, cubed
5 cups of sugar
2 cups of cider vinegar
1 cup water.
1 Tablespoon whole cloves
1 tablespoon whole allspice
1 Tablespoon stick cinnamon pieces
1 lemon, sliced

Let watermelon cubes stand overnight in enough salted water to cover. Drain. Cover with fresh cold water and bring to a boil. Cook over low heat until tender. Drain. Combine sugar ,water, and vinegar. Tie spices and lemon in cheesecloth bag. Add to sugar mixture and stir until mixture boils .Boil 5 minutes. Add watermelon cubes and simmer until transparent (about 15 minutes). Remove spice bag and pack in hot sterilized jars.
