Chili
Sauce 8 medium ripe tomatoes -- core & skin
removed
2 cups chopped celery
2 cups chopped onion
2 cups chopped
red bell pepper
2 cups chopped green bell pepper
1/4 teaspoon
nutmeg
1/4 teaspoon cinnamon
3 teaspoons salt
2 cups cider
vinegar
3 cups apples -- peeled and chopped
3 cups sugar

ounces tomato paste -- (2 small cans)
Combine first 11 ingredients
in a large Dutch oven or stock pot. Bring to a boil and then simmer for 2
hours. Add 2 cans of tomato paste and boil for 30 more min. Pour into
clean, hot jars and process for 15 min. Makes 6
pints.
