Southern Green Tomato Relish

(prep time: 1 1/2 hours makes: 2 quarts)

Ingredients:
12 large green tomatoes, peeled, cored & diced
4 large white onions, finely diced
2 red bell peppers, halved, seeded & finely diced
2 yellow bell peppers, halved, seeded & finely diced
(green bell peppers can also be used as a sub)
1 cup vinegar
2 cups granulated sugar
1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/8 tsp ground cloves
1/2 tsp celery salt
1/2 tsp mustard seed
1 jalapeno pepper, seeded & finely diced
1 1/2 tbps salt

Place tomatoes in a colander & sprinkle with 1 tbsp salt, stirring to coat. Drain tomatoes, save juice for other recipes. Place 1 quart of water in heavy-bottomed saucepot & bring to a rolling boil. Add onions and bell peppers, cook 2 minutes then drain & cool. In a large mixing bowl, add the drained tomatoes, par-boiled vegetables & all remaining ingredients. Blend well. Place the blended ingredients into a saucepot & simmer 45 minutes to 1 hour, stirring occasionally. The relish may then be jarred according to canning directions. Let the relish sit 1 month for best flavor. This can be served under a piece of fresh-grilled fish or chicken, or as an accompaniment to any sandwich or salad. Or just on its own.
