Cucumber Relish
4 cups shredded
unpeeled cucumbers
1 cup shedded green peppers
1/2 cup shredded red
pepper
3 cups shredded onions
3 cups shredded celery
1/4 cup
canning salt
2 cups white vinegar
3 1/2 cups sugar
1 tablespoon
celery seed
1 tablespoon mustard seed
Combine first 5
ingredients and sprinkle with 1/4 cup canning salt. Cover with ice cold
water. Put in icebox and let stand 4 hours. Drain really good. In pan add
last 4 ingredients and boil until sugar is disovled. Add the first 5
ingredients that was drained. Simmer for 10 minutes. Put in jars and water
bath for 10 minutes. Makes 5-6 pints
