CINNAMON PICKLES
PART 1:
15 large cucumbers
2 cups
lime
8 1/2 cups water
PART 2:
1 cup vinegar
1 Tbsp. alum
1/2 oz.
red food coloring
PART 3:
2 cups vinegar
2 cups water
8-10 cups
sugar
12 oz pkg. Red Hots cinnamon candy
5 sticks
cinnamon
Recipe
PART 1:
Peel & slice into rings or cut
into chunks. Scrape out the center.
Put in rings or
chunks in lime water.Let stand 24 hours.
Stir occasionally as
lime settles. Drain & rinse till clear.
Cover with cold
water. Let stand 3 hours then drain.
PART 2:
Place rings in pan.
Cover with mixture
from part 2, adding enough water to cover.
Heat , simmer 2
hours. Drain.
PART 3:
Mix ingredients from part 3.
Bring to a boil &
pour over rings.
Cover tightly &
let set overnight.
Drain & reheat
syrup the next 2 mornings.
On the third morning;
heat syrup & rings to a boil.
Pack in sterilized
jars.
