Green Tomato Relish
24 medium green tomatoes
12 medium
onions
1 head cabbage
6 bell peppers
12 hot peppers
1 cucumber,
peeled
1/2 cup salt
6 cups sugar
2 Tbsp. mustard seeds
2 Tbsp.
turmeric
2 quarts vinegar
Chop vegetables; add salt and let stand
overnight.
Wash and drain in colander.
Heat vinegar, sugar, mustard seeds
and turmeric to a boil.
Pour over vegetables and simmer 10 minutes.
Pour
into jars and seal.
