PICALILLI
1 qt. cabbage, chopped
1 qt. green tomatoes,
chopped
2 sweet green peppers, chopped
2 sweet red peppers, chopped
2
large onions, chopped
1/4 cup salt
1 1/2 cups vinegar
1 1/2 cups
water
2 cups brown sugar, firmly packed
1 teas. dry mustard
1 teas.
Turmeric
1 teas. celery seed
Chop cabbage, tomato, red and green
peppers and onions.
Mix with salt and let stand
overnight.
Next morning drain.
Boil vinegar, water, sugar and
spices for 5 minutes (Using a large kettle or boiler).
Add chopped vegetable mixture and
bring to a boil.
Boil for about 5
minutes.
Pour into hot sterilized jars and seal.
Store in a cool dark
place.
