Squash Relish
8 C.chopped
squash (you can use yellow, Zuchinni or combine the two)
2 large chopped
onions
4 large chopped bell peppers
2-1/2 c. sugar
2 c.
vinegar
Pimentos for color
Put 6 Tbl. salt with squash and onion and
let set 1 hr.
While setting mix sugar, pepper,
vinegar and
1 tsp. each mustand seed and
celery seed.
Heat & boil down,
Drain
squash and onion and add to the above - bring to a boil.
Put in jars and seal. Waterbath
pints 5 minutes.
