Magic Mincemeat Fruitcake
2 cups sifted
all-purpose flour 1teaspoon baking soda 2eggs, slightly beaten
11/3cups sweetened condensed milk 2cups (a 28-ounce jar)
ready-to-use mincemeat 2cups (a 1-pound jar) mixed candied fruit
1cup coarsely chopped walnuts Glacéed cherries and walnut halves
Preheat oven to 300 degrees. Butter a 9-inch tube or springform
pan. Line pan with wax paper; butter again. Sift flour and soda. Set
aside. In large bowl, combine eggs, milk, mincemeat, fruit and walnuts.
Mix well. Fold in flour mixture. Turn into prepared pan. Bake 2 hours or
until center springs back when lightly touched with finger and top is
golden brown. Cool in pan 5 minutes. Turn out of pan; remove paper. Cool.
Decorate with glacéed cherries and walnut halves.
