Red-Plum Spice Cake
Ingredients and Directions 1 cup
red plums -- drained (chop -- plums into -- quarters; reserve --
liquid) 2 cups flour 2 teaspoons baking powder 1/2 teaspoon
salt 1/2 teaspoon baking soda 1 teaspoon cinnamon 1 tsp
-- nutmeg 1/2 teaspoon cloves 1/2 cup shortening 1 cup
sugar 2 eggs -- well beaten 1/2 cup red plum liquid 1/2
cup chopped nuts (optional)
Sift flour and dry ingredients together. Cream
shortening with sugar; add eggs and beat thoroughly. Add dry
ingredients and beat well. Fold in plums, plum liquid and nuts. Pour
into cake pan approximately 7x11-inches. Bake at 375 degrees for
about 35 minutes. Cream Cheese Frosting: Beat 3 ounces cream
cheese, softened. Add 2 teaspoons plum liquid and 1-1/2 cups
powdered sugar.
