Real Butter Birthday or Wedding cake
made from Swans Down Cake Flour and real sweet
creamy butter
3 c. butter use unsalted butter
taste better 3 c .sugar 6 eggs 4 1/2 c Swans down cake
flour 4 tsp. baking powder Calumet is best 1 tsp .salt 1
1/3 c.milk 2 tsp vanilla *real thing only 1. Leave butter room
temp over night 2 .cream butter in large bowl or mixer 3.
add sugar slowly to butter mixer 4.to this add eggs one at a
time 5. beat till creamy 6.sift cake flour ,salt and baking
powder together 3 times 7.to creamed butter mix add small amounts
of flour ,then milk and vanilla
mix after each addition continue till all used Pour
into 3 large cake pans or 6, 9 inch pans as this recipe is doubled
Do not grease pans use wax paper on bottom Bake at 350 for
25- 30 minutes cool on racks Use lemon filling between
layers Ice with 7 minute frosting
7-Minute
Frosting
1
1/2 cups sugar 1/4 teaspoon cream of tartar or 1 tablespoon
white corn syrup 1/8 teaspoon salt 1/3 cup water 2 egg
whites 1 1/2 teaspoons pure vanilla extract
Place sugar,
cream of tartar or corn syrup, salt, water, and egg whites in the
top of a double boiler. Beat with a handheld electric mixer for 1
minute. Place pan over boiling water, being sure that boiling water
does not touch the bottom of the top pan. (If this happens, it could
cause your frosting to become grainy). Beat constantly on high speed
with electric mixer for 7 minutes. Beat in
vanilla.
