Mother's Fruitcake
2
cups sugar 1/2 cup shortening 1 egg 3 cups applesauce
1 teaspoon vanilla 2 tablespoons grated orange peel
Juice of 1 orange 4 cups flour 2 teaspoons baking soda
1 teaspoon baking powder 2 teaspoons cornstarch 1
teaspoon ground cloves 1 teaspoon cinnamon 1 teaspoon nutmeg
6 teaspoons cocoa 1 teaspoon salt 2 cups walnuts 2
cups raisins 2 cups mixed dried fruit About 1 cup red wine
Preheat oven to 275 degrees. Cream together sugar,
shortening and egg, then add applesauce, vanilla, orange peel and
juice. Combine flour, baking soda, baking powder, cornstarch,
cloves, cinnamon, nutmeg, cocoa and salt. Add to creamed mixture and
mix well. Fold in walnuts and fruit.
Line two 9- by 5-inch
loaf pans with parchment paper and pour in batter. Bake 2 1/2 hours.
Remove cakes from pans, cool, then wrap cakes in cheesecloth. Soak
cloth on each cake with about 1/2 cup wine. Refrigerate wrapped
cakes for a few
days.
