Lemon Cake
Roll
Ingredients 3 eggs 1 c. sugar 5 Tbsp.
water 1 tsp. vanilla extract 1 c. cake flour 1 tsp.
baking powder 1/4 tsp. salt Confectioners’ sugar 1 can
(22 oz.) LUCKY LEAF/MUSSELMAN'S Lemon Pie Filling
Preparation Grease jelly roll
pan. Line with greased waxed paper. Beat eggs until thick. Gradually
beat in sugar. Beat in water and vanilla. Sift together flour,
baking powder and salt. Add to egg mixture and beat until smooth.
Pour batter into pan. Bake at 375 degrees for 12-13 minutes. Do not
overbake. Loosen edges and immediately turn upside down on towel
sprinkled with confectioners’ sugar. Quickly and carefully peel off
waxed paper. Spread cake with pie filling and roll up. Wrap in towel
until cool (about 1/2 hour). Unwrap, sprinkle generously with
confectioners’ sugar. Cut into slices to serve. Servings:
