4 c. fresh apples, diced not too finely
2 c. white
sugar
¼ c. cooking oil
1 c. nuts, chopped
2 eggs, well
beaten
2 t. vanilla
2 c. flour
2 t. soda
2 t.
cinnamon
1 t. salt
Mix apples and sugar, then add oil,
nuts, eggs, and vanilla. Mix dry ingredients and add to moist
mixture. Bake in a 9x9x2" pan in 350º oven for one hour or until
cake shrinks from edges of pan.
