Easy
Cassata
This slimmed-down version of the traditional
Italian dessert is delicious and worth the effort.
Ingredients Cassata: 1 (16-ounce)
frozen all-butter pound cake, thawed 1/4 cup orange curaçao 2
cups ricotta cheese 1/2 cup confectioners’ sugar 1/2 cup
grated semisweet chocolate
Chocolate
Frosting: 1 cup semisweet chocolate pieces 1/4 cup
sour cream 1/8 teaspoon salt
Instructions For cassata, slice pound
cake lengthwise into thirds. Sprinkle cut side of each layer with
curaçao. Set aside.
Combine ricotta, confectioners’ sugar and
chocolate. Spread half of mixture on bottom layer of cake. Cover
with center layer of pound cake. Spread with remaining half of
mixture. Cover with top cake layer. Cover and refrigerate
overnight.
For frosting, melt chocolate and sour cream
together over low heat, stirring occasionally. Stir in salt. Spread
over top and sides of chilled cake.
