Abraham Lincolns Favorite Cake
1
cup butter 1 1/2 teaspoons vanilla 1 teaspoon almond extract
2 cups sugar 3 cups flour 1 tablespoon baking powder
1 teaspoon salt 1 cup buttermilk 1 1/4 cups toasted
blanched almonds 6 large egg whites
Beat egg whites
til frothy. Add 1 cup sugar gradually til egg whites are stiff
peaks. Fine chop nuts. Cream the butter and 1 cup sugar til
light and fluffy. Sift dry ingredients together. Add
flavoring to milk. Combine nuts with flour mixture Add wet
to dry by 1/3rds. Fold egg whites into batter. Place greased
wax paper on tub pan Turn batter into a 10-inch tube pan.
Bake at 350° about 1 hour or until cake tests done. Frost
with boiled icing.
