Banana Cake with Cream Cheese
Frosting
Ingredients
2-1/4 cups (525 ml)
flour
3/4 tsp (4 ml) baking soda
1/2 tsp (2 ml) baking
powder
1/2 tsp (2 ml) salt
2 large mashed ripe bananas
1/4 cup (60 ml) buttermilk
1 tsp (5 ml) vanilla extract
1-1/2 sticks unsalted butter, room temperature
1-1/3 cups
(325 ml) sugar
2 large eggs
For frosting:
1 8 oz (224
grm). package cream cheese, room temperature
1 cup (225 ml)
powdered sugar
1 stick butter, room temperature
1 tsp (5 ml)
vanilla extract
Preparation
Preheat oven to 350 degrees (175
C.).
Butter 2 loaf pans or one 9X11X2 inch pan.
Mix flour,
baking soda, baking powder salt in a bowl.
Mix mashed bananas,
buttermilk and 1 tsp (5 ml) vanilla in another bowl.
Add butter,
sugar and vanilla to banana mixture, beat until blended, then mix in
the dry ingredients.
Bake cakes 25 to 35 minutes until toothpick
comes out mostly clean.
Frosting:
Beat cream cheese and
butter in large bowl until fluffy.
Add vanilla.
Gradually
mix in powdered sugar.
Frost tops of cakes or unmold loaves and
frost after cool.
