Banana Coconut
Cake
1 1/2 cups Whole Wheat flour 1 cup
Unbleached flour 2 teaspoons Baking soda 1 cup Unsweetened
coconut 1 cup Walnuts; chopped -- optional 2 Eggs 2/3 cup
Butter 2/3 cup Honey 4 ounces Cream cheese (1/2 cup) 1/2
cup Instant milk 1 teaspoon Vanilla 8 ounces Very fresh
tofu 3 Bananas; very ripe -- mashed Well
Mix well in a
large bowl the flour, soda, coconut and walnuts. Mix eggs,
butter, honey, cream cheese, instant nonfat milk, vanilla and
tofu in blender until smooth. Use spatula to keep mixture in blades
if necessary. Pour blended ingredients into the flour
mixture. Add bananas; mix well. Turn into a floured 10"
buttered and floured springform pan Bake at 350 for 45
minutes.
