Yellow Rice (Puerto Rico)  

  • 2 Tablespoons Olive Oil
  • 3 Cloves Garlic
  • 1 Medium Onion -- diced
  • 1 Bell Pepper
  • 1 Cup Frozen Peas
  • 1 Teaspoon Paprika
  • 1 Teaspoon Salt
  • 1 Tablespoon Annatto Oil -- (optional)
  • 1 Pinch Saffron -- (optional)
  • 2 Cups Rice
  • 4 Cups Water
  • Heat heavy pot add oil, garlic, onion and pepper. Saute until tender. Add remainign ingredients, cover, simmer, 20 to 25 minutes until rice is done.
