Warm Pasta Salad With Goat Cheese

  • 2 Medium Shallots -- chopped
  • 4 Cloves Garlic -- chopped
  • 1 Tablespoon Olive Oil
  • 1 Bunch Arugula
  • 2 Teaspoons Salt
  • 1/2 Pound Small Pasta Shells -- cooked
  • 1/3 Cup Goat Cheese
  • 1/3 Cup Parmesan Cheese
  • 1/2 Teaspoon Black Pepper
  • 2 Tablespoons Fresh Parsley -- chopped

While pasta is still warm, toss with both cheeses so that they will melt. Saute shallots and garlic in oil. toss with pasta and remaining ingredients and serve.
