Two Bean Macaroni
4 Slices Bacon -- diced
1 Large Onion -- chopped
1 Large Carrot -- chopped
1 Green Pepper -- chopped
1/4 Cup Parsley -- chopped
2 Teaspoons Basil
1 Teaspoon Oregano
1 Can Tomatoes -- chopped
20 Ounces White Beans, Canned
1 Can Pinto Beans
2 Cups Macaroni -- cooked
Salt And Pepper
1/2 Cup Cheddar Cheese --
grated
Cook bacon
until tender. Saute vegetables in bacon drippings. Add tomatoes,
heat to boiling. Simmer 10 minutes. Add beans, macaroni etc. heat
through. Top with cheese.
