Two Bean Macaroni

  • 4 Slices Bacon -- diced
  • 1 Large Onion -- chopped
  • 1 Large Carrot -- chopped
  • 1 Green Pepper -- chopped
  • 1/4 Cup Parsley -- chopped
  • 2 Teaspoons Basil
  • 1 Teaspoon Oregano
  • 1 Can Tomatoes -- chopped
  • 20 Ounces White Beans, Canned
  • 1 Can Pinto Beans
  • 2 Cups Macaroni -- cooked
  • Salt And Pepper
  • 1/2 Cup Cheddar Cheese -- grated
  • Cook bacon until tender. Saute vegetables in bacon drippings. Add tomatoes, heat to boiling. Simmer 10 minutes. Add beans, macaroni etc. heat through. Top with cheese.
