Three Bean Cakes With Salsa
3 Tablespoons Corn Oil
1 Medium Onion -- chopped
1 Medium Green Pepper --
chopped
1 Medium Jalapeno -- chopped
2 Cloves Garlic -- finely
chopped
1 Cup Pinto Beans -- cooked
1/2 Cup Black Beans -- cooked
1/2 Cup Kidney Beans -- cooked
1/2 Cup Vegetable Stock
1/4 Cup Ketchup
1 Teaspoon Chili Powder
1/4 Teaspoon Coriander
Salt And Pepper -- to taste
1 Cup Rice -- cooked
All-Purpose Flour
1 Cup Salsa
Heat oil in large skillet, saute
onions, garlic and both peppers until onion is transparent about 10
minutes. add everything down to salt and pepper. simmer until liquid
evaporates, stirring frequently. about 20 minutes. pour mixture into
food processor. add rice and process to combine well. cover and
refrigerate until chilled. shape bean mixture into patties about a
1/4 cup each. dust lightly with flour. use remaining tablespoon of
oil to fry over medium heat. fry until crisp. serve with
salsa. |
