Sausage Curry
- 1 Pound Hot Italian Sausage
-- sliced
- 1 Cup Water
- 2 Tablespoons Olive Oil
- 1 Small Onion -- sliced
- 1 Teaspoon Ginger -- finely
chopped
- 1 Clove Garlic -- finely
chopped
- 1/2 Teaspoon Crushed Red
Pepper
- 1 Tablespoon Cumin
- 1/4 Teaspoon Turmeric
- 1/2 Teaspoon Salt
- 3 Small Potatoes -- halved
- 1 Large Tomato -- finely
chopped
- 2 Tablespoons Cilantro --
finely chopped
Add oil and
brown sausage and onion for 2 minutes. Add ginger, garlic, red
pepper, turmeric and salt. Stir fry for 2 minutes. Add potatoes, mix
well, add water, cover and cook for 10 minutes. Add tomatoes, cover
and cook for 10 more minutes. Add coriander and stir. Serve with
rice. |
