Shrimp Soup

  • 2 Pounds Raw Shrimp
  • 2 Quarts Water
  • 3 Large Onion -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 3 Tablespoons Olive Oil
  • 1 Can Tomatoes -- Chopped
  • 3 Tablespoons Parsley -- Chopped
  • 2 Large Bay Leaf
  • 1 Can Tomato Paste
  • Salt And Pepper -- To Taste
  • 1/2 Teaspoon Cayenne
  • 1 Cup Dry White Wine
  • 1/4 Cup Cilantro -- Chopped
  • Boil shrimp in water until done, remove shrimp, set aside; reserve liquid, in separate pot, saute onion and garlic in olive oil for 5 minutes; add tomatoes, parsley, bay leaves, tomatoe paste, salt, pepper and cayenne, cover and simmer 25 minutes; add wine to shrimp cooking water and simmer 25 minutes,then add shrimp and tomatoe mixture to cooking water, and simmer for 5 mnutes, sprinkle with cilantro and serve.
