Shrimp And Corn

  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Garlic -- finely chopped
  • 1 Small Onion -- finely chopped
  • 1/2 Pound Shrimp -- chopped
  • 1/2 Cup Chicken Broth
  • Salt And Pepper -- to taste
  • 3 Cups Corn -- frozen
  • 1/2 Pound Spinach
  • Heat oil in medium pot. Saute garlic and onion until onion is transparent. Add shrimp and chicken broth. Season with salt and pepper. Bring to a boil. Add corn and simmer until corn is tender. Add spinach and simmer for 3 minutes. Serve over rice.
