Shrimp And
Corn
2 Tablespoons Olive Oil
1 Tablespoon Garlic -- finely
chopped
1 Small Onion -- finely chopped
1/2 Pound Shrimp -- chopped
1/2 Cup Chicken Broth
Salt And Pepper -- to taste
3 Cups Corn -- frozen
1/2 Pound Spinach
Heat oil in medium pot. Saute
garlic and onion until onion is transparent. Add shrimp and chicken
broth. Season with salt and pepper. Bring to a boil. Add corn and
simmer until corn is tender. Add spinach and simmer for 3 minutes.
Serve over rice. |
