Tortellini And Spinach Soup
- 2 Tablespoons Olive Oil
- 2 Ounces Pancetta -- Chopped
- 3 Cloves Garlic -- Chopped
- 1 Medium Onion -- Chopped
- 9 Cups Chicken Broth
- 1 Teaspoon Basil
- 1 Teaspoon Oregano
- 1 Package Spinach Tortellini
- 2 Cans Tomatoes -- Chopped
- 8 Ounces Spinach -- Chopped
- Salt And Pepper -- To Taste
- Parmesan Cheese
Saute pancetta, garlic and onion
in oil for 15 minutes. Add broth, basil and oregano. Bring to a
boil, add pasta and simmer for 10 minutes. Add tomatoes, simmer 5
minutes. Add spinach, simmer for 3 minutes. Season with salt and
pepper. Serve with the parmesan.
