Quick Pecan Pralines

  • 1 Cup Brown Sugar -- packed
  • 1 Cup White Sugar
  • 2/3 Cup Evaporated Milk
  • 3 Tablespoons Butter
  • 1/2 Teaspoon Vanilla
  • 1 1/2 Cups Pecans
  • Grease a sheet of waxed paper with a bit of butter. In a saucepan, mix brown and white sugars with evaportated milk. Bring to a boil, stirring constantly. Reduce heat to medium and boil lightly, stirring constantly. Using candy thermometer, birng to 238 degrees about 7 minutes. Remove from heat and let cool until temperature drops to 200 degrees or less. With a wooden spoon, beat in butter and vanilla. Beat until mixture thickens and becomes creamy. Stir in pecans and drop mixture by the spoonfuls onto the waxed paper. Let stand for a few hours before serving or storing.
