Quesadillas
De Pescado Vercruzana
1 Pound Fish Fillet
Salt And Pepper -- to taste
2 Medium Onion -- sliced
1 Medium Clove -- ground
1 Medium Bay Leaf
1 Clove Garlic -- finely
chopped
1 Medium Tomato -- finely
chopped
2 Medium Jalapeno -- finely
chopped
1 Teaspoon Vinegar
1 Tablespoon Cilantro -- finely
chopped
Tortillas
Oil For Frying
Boil fish in enough salted water
to cover along with 1 onion, clove, bay leaf, and garlic for 10
minutes. Remove fish and let cool. Shred. Fry onion, tomato,
jalapeno and vinegar in oil for 8 minutes. Add fish and cilantro.
Put fish mixture over half of a tortilla, fold over and fry on side
until it begins to brown. Serve.
