Balls
1 Pound Potatoes -- peeled and
boiled
1/2 Pound Feta Cheese
1 Tablespoon Parsley -- finely
chopped
1 Small Onion -- finely chopped
1 Clove Garlic -- finely
chopped
2 Large Eggs -- separated
Salt And Pepper -- to taste
1 Teaspoon Lemon Juice
Dry Bread Crumbs
Oil -- for deep frying
Beat potatoes until smooth. Mash
feta with a fork and add to potatoes. Stir in parsley, onion,
garlic, egg yolks, salt and pepper. Add lemon juice and blend well.
Shape into tiny balls. Dip in egg whites and roll in bread crumbs.
Fry until golden. |
